Ingredients
- 1 pound ground turkey
- 1 cup chopped onion
- 1 teaspoon olive oil
- 1 cup water
- 1 (8 ounce) can tomato sauce
- 1 (16 ounce) can canned diced (or crushed) tomatoes
- 1 (16 ounce) can canned black (or kidney) beans, drained and rinsed
- 1/2 cup fresh or frozen corn kernels (optional)
- 1 tablespoon garlic, minced
- 2 tablespoons chili powder (dark if you have it)
- 1/2 teaspoon paprika (hot, not sweet)
- 1/2 teaspoon dried oregano
- 1/8 - 1/4 teaspoon ground cayenne pepper (optional, adjust to taste)
- 1 tablespoon ground cumin
- 1/4 teaspoon salt
Directions
- Heat a large pot or dutch oven over medium heat
- Add the ground turkey and cook until evenly browned
- Drain off the fat from the turkey and remove to a bowl
- Saute the onion in the oil and cook until the onion starts to get transparent
- Add browned turkey and remaining ingredients, bring to a boil
- Simmer for 30-60 minutes and adjust salt to taste
- Serve over white rice
