Ingredients

  • 1 pound ground turkey
  • 1 cup chopped onion
  • 1 teaspoon olive oil
  • 1 cup water
  • 1 (8 ounce) can tomato sauce
  • 1 (16 ounce) can canned diced (or crushed) tomatoes
  • 1 (16 ounce) can canned black (or kidney) beans, drained and rinsed
  • 1/2 cup fresh or frozen corn kernels (optional)
  • 1 tablespoon garlic, minced
  • 2 tablespoons chili powder (dark if you have it)
  • 1/2 teaspoon paprika (hot, not sweet)
  • 1/2 teaspoon dried oregano
  • 1/8 - 1/4 teaspoon ground cayenne pepper (optional, adjust to taste)
  • 1 tablespoon ground cumin
  • 1/4 teaspoon salt

Directions

  1. Heat a large pot or dutch oven over medium heat
  2. Add the ground turkey and cook until evenly browned
  3. Drain off the fat from the turkey and remove to a bowl
  4. Saute the onion in the oil and cook until the onion starts to get transparent
  5. Add browned turkey and remaining ingredients, bring to a boil
  6. Simmer for 30-60 minutes and adjust salt to taste
  7. Serve over white rice
