run time options

Greetings:

I would like to see someones examples of setting runtime options in the
/etc/sudoers file. The installation Notes show the options that can be set
at runtine but there are no examples of how to do this or the correct
placement or syntax.


I am looking to change:

1. the email address that sudo sends to.
2. the logfile name and location
3. the editor of choice.
